Ruby’s Chicken Biryani ( روبی کی چکن بریانی )
Biryani (pronounced [bɪr.jaːniː]) is a mixed rice dish with its origins among the Muslims of the Indian subcontinent. It can be compared to mixing a curry, later combining it with semi-cooked rice separately. This dish is especially popular throughout the Indian subcontinent, as well as among the diaspora from the region. It is also prepared in other regions such as Iraq. It is made with Indian spices, rice, meat (chicken, beef, goat, pork, lamb, prawn, or fish), vegetables or eggs. The word ‘biryani’ is derived from a Persian word, birian, which means fried before cooking. It is one the most popular dishes which has acquired a niche for itself in South Asian cuisine.
It has so many variations that you could fill a whole menu with just Biryani. Here we present a variation of our own. As far as we know it is our own creation and you might not find it anywhere else.

Step By Step
- Take the chicken
- Add the salt
- Add the red chilli powder
- Add the turmeric powder
- Add the ginger and garlic paste
- Add the lemon juice
- Mix well so that all the chicken is thoroughly covered
- Heat oil in a pan on medium heat
- Add the onion to the oil
- Fry the onion till it is dark brown
- Remove from oil and put away we will use them later
- Heat oil in a pan on medium heat

- Add the water to a pan
- Add the salt to the water
- Add the cinnamon
- Add the black cardamom
- Add the cloves
- Add the bay leaves
- Cover and bring to a boil
- Add the rice
- Boil the rice stirring occasionally till the rice is tender
- Drain the water
- Heat oil in a pan on medium heat
- Add the ginger and garlic paste
- Fry till it is golden brown
- Add the marinated chicken along with the juices
- Stir-fry for about five minutes and the water starts to dry
- Add the coriander powder
- Add the yogurt
- Cover and let cook till the meat is tender
- Take out half of the gravy
- Put away we will use it later
- Mix the yogurt fresh coriander leaves
- And the mint leaves and the green chilies
- Put the mixture aside
- Take a wider pot with a lid
- Spread half of the boiled rice in the pot
- cover the rice with the yogurt mixture
- Spread evenly
- Spread the chicken curry evenly
- Spread the fried onion over the curry
- Cover with a layer of the rest of the boiled rice
- Put the mixture aside
- Take the gravy we put away earlier in a pan
- Bring to a boil
- Dry to desired thickness on medium heat
- Add the cumin seeds
- Add the coriander leaves
- Cover with a layer of the rest of the boiled rice
